The Blade – Beauty Meets High Performance
The heart is a three-layer construction: The core layer of Apex Ultra is hardened to 66 HRC – one of the sharpest and hardest knife steels available. It is enveloped by outer layers of O2, 15N20, and copper, which gives the Damascus pattern its unique, warm-glowing character. The result is a pattern that is different and unrepeatable each time – a true collector's item with maximum everyday usability.
The Shape – Versatility of Japanese Tradition
The Santoku shape is deeply rooted in Japanese culinary culture and ideal for fine cuts of vegetables, fish, and meat. The wide, slightly curved blade allows for efficient rocking and precise chopping – an all-rounder that should not be missing in any serious kitchen.
The Handle – Natural, Warm, Hand-flattering
The walnut handle fits snugly in the hand, combining the natural warmth of the wood with the cool precision of the blade. A harmonious interplay of aesthetics and ergonomics.
Care
Since copper Damascus is not stainless, the rule is: dry thoroughly after use and oil lightly. This way, this knife will remain sharp, beautiful, and ready for use for generations.
