A filleting knife is the most delicate tool in the kitchen – and this one is on a whole different level. Hand-forged in Upper Austria, it combines maximum functionality with the fascinating appearance of genuine mosaic Damascus steel.

The blade – lively and distinctive
Forged from a combination of O2 and 15N20 steels and hardened to 62 HRC, the blade reveals its characteristic explosion pattern when etched – a lively, recurring image that is different for every knife. No mosaic Damascus is exactly alike. What emerges here is not a mass-produced item, but a unique piece with its own character.
The thin, flexible blade is made for precise filleting – it follows the bone, glides through fish flesh, and allows for clean, effortless cuts that no other knife can achieve.
The handle – a natural work of art in itself
Stabilized curly birch: The wood, with its wild, irregular grain, is permanently strengthened and sealed by the stabilization process. The result is a handle that not only looks exceptional but also remains dimensionally stable and durable when wet – ideal for use with fish and damp ingredients.
Care
Since the steel is not stainless: after use, dry thoroughly and oil lightly. This will keep the blade permanently sharp and beautiful.
